Breaking News ! A chef who started out as a teenage pot washer is about to finally realise his dream by opening his own restaurant - but is appealing for help as part of the recipe for success. Rick Armstrong, 40, and his wife Amy, 32, hope to unveil their business the Copper Room, at Chestergate, Macclesfield town centre, in late May or early June. It will have a European menu with the focus on steak, seafood and pasta and is based at Charles Roe House, where the couple ran a pop-up restaurant prior to lockdown. The couple, who live on Maple Avenue, Macclesfield, are hoping to attract £40,000 of investment and will launch an online Kickstarter campaign later this month. Rick said: “As far back as I can remember I was always cooking with my mum in the family kitchen. As a teenager I got my first job as a pot washer and climbed the ranks to chef. ”We have spent our happiest years working in hospitality for over 10 years have shared a dream to open our own restaurant, with me in the kitchen and Amy front of house. ”In 2019 our son Marcus was born and of course that changed everything for us. “He gave us the motivation we needed to finally take the plunge and create a family business to be proud of and to one day pass down to him.” The Kickstarter campaign will offer rewards for donations with an apron or postcard given for smaller amounts.

. Should this be successful the money will pay for hiring of staff, installing tills and a booking system and the conversion of the ground floor to a cocktail bar. It would also allow Rick, who currently sells booking software to restaurants for a living, and Amy to both commit full time to the venture. The couple were considering a permanent restaurant at the beginning of 2020 following the success of their pop-up but the Covid pandemic intervened. The restaurant will source produce from local suppliers and be on the middle floor of the Grade II listed building. Rick said: “Our hometown of Macclesfield is undergoing an exciting regeneration with some amazing places to eat and many great young chefs emerging. “We love our home town and want to be a part of this regeneration, Amy is the brain of the operation and has plans to build an exciting wine collection. ”We are now ready to put all our hard work and planning into action but we need your help.” The Kickstarter campaign will go live on Tuesday, April 13.
